APHRODISIAC DESSERTS: THE REVISITED TARTELETTE WITH RED FRISSON WATERMELON

To make this recipe you will need:

  • 3/4 round slices of watermelon, medium thickness
  • 150 ml of very cold coconut cream or milk
  • 1 teaspoon maple syrup (adjust according to your sugar preferences)
  • Beet juice (fresh or from cooking beets) to adjust the color
  • Buckwheat crunchies

1. Refrigerate the coconut milk, as well as the mixer bowl and beaters, for a few hours before starting the preparation.

2. Just before serving, cut the watermelon into slices and, using a cookie cutter or a glass, form perfect circles.

3. Then whip the coconut milk or cream with a drizzle of maple syrup to soften it. 4. Gradually add beet juice until you get a nice pink tint — about four teaspoons is enough for a delicate effect.

4. Spread a generous portion of cream on each round of watermelon.

5. Add a touch of crunchy buckwheat for contrast and, for an artistic touch, garnish with small pieces of beetroot cut into flowers or fine patterns.
